No Bake Coconut Date Cookie Bars


1 cup cooked chickpeas
1 3/4 cup oat flour
1/8 tsp salt
1 tsp vanilla
2 tbsp un sweetened coconut flakes
1/4 cup chopped walnuts
8 pitted medjool dates
4 pitted, quartered and chopped medjool dates
1/4 cup and 2 tbsp cold water
1 tbsp maple syrup

In a high speed blender add chickpeas, vanilla, 8 dates, and water, blend until smooth.

In a bowl mix together dry ingredients. Add maple syrup and chickpea date paste.

Press into a parchment lined 8″ sq pan. Cut into 1″ square bites once chilled. Delicious paired with raspberry or cacao nibs.
