Apple Cinnamon Oat Cakes

*gluten free *no oil *low fat WFPB vegan

You will need:

1.5 cups oats
1 cup of soy milk
3 medjool dates -pitted
1/2 tsp baking soda
1/2 tsp baking powder
1/2 tsp cinnamon
1/8 tsp salt
1 tsp Bob’s Red Mill Natural Foods Egg Replacer
1/2 tsp vanilla extract
1 apple coarsely chopped (with the peel on)

Put all the ingredients in a high speed blender and blend until smooth. Cook until golden brown on med/low heat in a non stick skillet, flip and repeat.

Makes 1-2 servings.
