Chipotle Black Bean Chilli

*vegan *low fat *high in resistant starch *oil free

You will need:

4 cups cooked black beans
2 cups cooked chick peas
1 large cooked sweet potato or yam chopped with peel
(don’t throw it away, there’s good nutrition in the peel)
1 cup frozen corn
1 can whole tomatoes chopped with juice
1 onion chopped
3 chipotle chilli peppers in adobe sauce
2 tbsp maple syrup
2 tbsp chilli powder
2 tbsp nutritional yeast
1 tbsp garlic powder
1 tbsp onion powder
1 tbsp smoked paprika
1 tsp chipotle powder
1/4 tsp black pepper

salt to taste

Mix ingredients in non stick pan and cook until heated through and flavours combined. Cornbread recipe c/o Brand New Vegan.
