Apple Cinnamon Muffins or Bread

*vegan *sugar free *oil free *gluten free *WFPB

Pre Heat oven to 350 F

Add to a high speed blender:

2.5 cups oats
1 tsp baking soda
2 tsp baking powder
1 tbsp Bob’s Red Mill Natural Foods egg replacer
1 tsp cinnamon
1/2 tsp salt
7-8 pitted Natural Delights Medjool Dates
1 tbsp vanilla

2tbsp vinegar
3/4 cup soy milk
1/3 cup water
3 apples. 2 unpeeled and chopped. 1 peeled and finely chopped (add the peel to the blender not the chopped pieces.)

Blend until everything is well mixed and add the finely chopped apple pieces.

Bake at 350 for 45-50 minutes in parchment lined muffin or loaf pan.
