Crispy Potato Cakes

*fat free *vegan

You will need:

6-8 cups of mashed potatoes
1 bunch chopped green onion
1 tbsp onion powder
1 tbsp garlic powder
1 tsp salt
1/4 tsp black pepper
4 tbsp nutritional yeast
1 tbsp vegetable stock powder

*if using left over mashed potatoes you might need to add flour to thicken it so they won’t fall apart when dipped in the cornmeal batter.

1 cup corn meal
1/2 cup soy milk
1/2 cup water

1 cup panko bread crumbs
2 tbsp nutritional yeast
1 tsp onion powder
1 tsp garlic powder.
1/2 tsp basil flakes
1/8 tsp black pepper

Bake @ 425 40 min or until golden brown.

Tip: Make smaller into nugget sized patties and experiment with different dipping sauces.
