Combine dry ingredients in a mixing bowl. Add the grated carrots, vanilla & lime juice. In a blender add the almond milk and dates blend until smooth. Add to bowl and stir all the ingredients until well combined but do not over mix.
Spoon mixture into a parchment lined 4x8" loaf pan. Bake at 350 F for 50 min.
For a more decadent treat feel free to top with a confectioners glaze or vegan icing. Tip: Most store bought frostings are vegan.
