  1. Preheat oven to 400 F. For the cookies: In a bowl add all the ingredients except for the flour. Beat on high with an electric mixer until smooth. Add flour and mix on low until incorported then stop - do not over mix. Sprinkle flour on a clean surface. Roll dough to 1 cm thickness and cut out shapes. Place on parchment lined cookie sheets. Bake for 12 minutes.
Icing
  1. In a bowl mix sugar, butter, soy milk, vanilla extract and beet juice (or food colouring) until smooth and blended. Fill a zip lock bag and cut the corner. Squeeze onto cooled cookies and embellish with sprinkles, chopped nuts, candy or whatever you have on hand! Enjoy!
